Ingredients
- 4 pieces eggs
- 80 g shredded cheddar
- 1 piece red bell pepper
- 200 g romaine lettuce
- 1 piece avocado
- 1 tsp ground cumin
- 1 tbsp olive oil
Instructions
Step 1
Slice the bell pepper into strips. Chop the lettuce and slice the avocado.
Step 2
Heat the oil in a pan. Sauté the pepper over high heat for 4 minutes.
Step 3
Whisk the eggs with cumin, pour them over the peppers. Scramble for 3 minutes over medium heat, add the cheddar, and stir until melted.
Step 4
Divide the lettuce among bowls, top with the cheesy scrambled eggs and avocado slices. Serve.
