Mediterranean Bowl with Grilled Halloumi and Cauliflower Rice

Ingredients
- 250 g Halloumi
- 400 g Cauliflower
- 150 g Cherry tomatoes
- 50 g Kalamata olives
- 2 tbsp Lemon juice
- 1 tbsp Olive oil
Instructions
Step 1
Grate the cauliflower to make rice. Cut the halloumi into 1 cm slices and halve the cherry tomatoes.
Step 2
Heat the oil in a skillet over high heat. Grill the halloumi slices for 2 minutes on each side. Set aside.
Step 3
In the same skillet, sauté the cauliflower rice for 5 minutes over medium heat. Drizzle with lemon juice.
Step 4
Divide the cauliflower rice among bowls, top with halloumi, cherry tomatoes, and olives. Serve.
