Mediterranean Bowl with Halloumi and Roasted Vegetables

Ingredients
- 200 g Halloumi
- 2 piece Zucchini
- 200 g Cherry tomatoes
- 50 g Black olives
- 2 tbsp Olive oil
- 1 tsp Dried oregano
Instructions
Step 1
Preheat the oven to 200°C. Slice the zucchini into thick rounds and halve the cherry tomatoes.
Step 2
Arrange zucchini and tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with oregano. Bake for 15 minutes.
Step 3
Meanwhile, cut the halloumi into 1 cm thick slices and grill in a hot dry pan for 2 minutes per side.
Step 4
Divide the roasted vegetables between two bowls, top with grilled halloumi and olives. Serve warm.
