Moroccan Bowl with Feta, Roasted Cauliflower and Harissa
A Moroccan-inspired bowl with golden roasted cauliflower, creamy feta, fresh spinach and a touch of harissa. Spiced, comforting and packed with protein.

Ingredients
- 200 g Feta
- 400 g Cauliflower
- 150 g Fresh spinach
- 1 tbsp Harissa
- 1 tsp Ground cumin
- 2 tbsp Olive oil
Instructions
Step 1
Preheat the oven to 210°C. Separate the cauliflower into florets, coat with olive oil and cumin. Spread on a baking sheet.
Step 2
Roast the cauliflower for 25 minutes, stirring halfway through, until golden brown.
Step 3
Meanwhile, wash the spinach and crumble the feta. Dilute the harissa in 1 tbsp of water.
Step 4
Divide the spinach among bowls, add the roasted cauliflower and crumbled feta. Drizzle with diluted harissa and serve.
