Indian Bowl with Red Lentils and Roasted Cauliflower

Ingredients
- 150 g red lentils
- 300 g cauliflower
- 100 g fresh spinach
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tbsp olive oil
Instructions
Step 1
Preheat the oven to 220°C. Cut the cauliflower into small florets, coat with olive oil and cumin, and spread on a baking sheet.
Step 2
Roast the cauliflower for 20 minutes, turning halfway through, until golden brown.
Step 3
Meanwhile, rinse the red lentils and cook them for 10 minutes in water with the turmeric until tender. Add the spinach at the end of cooking.
Step 4
Divide the lentils between two bowls, top with roasted cauliflower, and serve hot.
