Grilled Sardines Bowl with Provençal Vegetables
A rustic, sun-filled bowl: fresh grilled sardines over a bed of confit tomatoes, thinly sliced fennel and olives, perfumed with fresh basil.

Ingredients
- 8 pieces Fresh sardines (gutted)
- 200 g Cherry tomatoes
- 1 piece Fennel
- 50 g Green olives
- 1 bunch Fresh basil
- 2 tbsp Olive oil
Instructions
Step 1
Thinly slice the fennel on a mandoline. Cut the cherry tomatoes in half.
Step 2
Oil the sardines and grill them for 3 to 4 minutes per side in a very hot skillet or on a barbecue.
Step 3
Divide the sliced fennel, tomatoes, and olives among the bowls.
Step 4
Place the grilled sardines on top, scatter with fresh basil, and drizzle with olive oil.
