Asian Quinoa-Avocado-Kiwi Bowl with Peanut Sauce
A vibrant Asian fusion bowl combining quinoa, lentils, avocados, and kiwis, topped with a creamy peanut sauce. An explosion of fresh and exotic flavors inspired by Vietnamese and Thai cuisines.
Ingredients
- 100 g Quinoa
- 80 g Lentils
- 2 piece Avocados
- 3 piece Kiwis
- 50 g Walnuts
- 60 g Peanut butter
- 3 tbsp Soy sauce
- 2 tbsp Honey
- 2 tbsp Fresh lemon juice
- 1 tsp Fresh grated ginger
- 200 ml Water
- 50 ml Water for sauce
- 1 pinch Salt
Instructions
Step 1
Rinse the quinoa and lentils, cook in 200ml water for 20 minutes.
Step 2
Make the sauce: blend peanut butter, soy sauce, honey, lemon juice, ginger, and 50ml water until smooth.
Step 3
Halve the avocados, remove the pit, and slice into thin strips.
Step 4
Peel and cut the kiwis into wedges.
Step 5
Roughly chop the walnuts.
Step 6
Divide the quinoa-lentil mixture between 2 bowls.
Step 7
Arrange the avocados, kiwis, and walnuts around the quinoa in an attractive pattern.
Step 8
Generously drizzle the peanut sauce over the bowls and serve immediately.
