Asian Bowl with Lentils, Beets, and Kiwis

Ingredients
- 250 g Lentils
- 600 g Beets
- 4 piece Kiwis
- 2 piece Avocados
- 20 g Mustard
- 100 g Oat flakes
- 60 ml Oil
- 600 ml Water
- 5 g Salt
- 2 g Pepper
- 30 ml Lemon juice
- 30 ml Soy sauce
- 10 g Ginger
Instructions
Step 1
Cook the lentils in salted water for 20 minutes. Drain and set aside.
Step 2
Cut the beets into cubes, coat with oil, sprinkle with salt, and roast in the oven at 200°C for 20 minutes.
Step 3
Prepare the sauce: blend the avocado, mustard, lemon juice, and oil. Season with soy sauce and ginger.
Step 4
Toast the oat flakes dry in a pan for 3 minutes. Peel and slice the kiwis.
Step 5
Assemble the bowls: base of lentils, roasted beets, kiwis, toasted oat flakes. Drizzle with avocado-mustard sauce. Serve chilled.
