Baked Beef Meatballs with Eggplant and Peppers
Spiced beef meatballs baked over a bed of tender eggplant and bell peppers. A generous and comforting Turkish-inspired dish.

Ingredients
- 350 g Ground beef
- 1 piece Eggplant
- 1 piece Yellow bell pepper
- 1 tsp Ground cumin
- 2 tbsp Olive oil
- 1 bunch Fresh parsley
- 1 pinch Salt and pepper
Instructions
Step 1
Preheat the oven to 210°C. Cut the eggplant into cubes and the bell pepper into strips.
Step 2
Arrange the vegetables on a baking sheet, drizzle with olive oil, season with salt, and bake for 10 minutes.
Step 3
Meanwhile, combine the ground beef with cumin, chopped parsley, salt, and pepper. Form 8 meatballs.
Step 4
Add the meatballs to the baking sheet among the vegetables and bake for an additional 12 minutes until fully cooked.
