Vegetarian Red Lentil Bolognese
A rich and flavorful tomato sauce made with red lentils instead of meat. Served over farfalle for extra texture.

Ingredients
- 300 g Farfalle
- 500 g Tomato sauce
- 150 g Red lentils
- 2 piece Fresh tomatoes
- 1 stalk Celery stalk
- 100 g Grated Gruyère
- 2 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
- 1 clove Garlic
Instructions
Step 1
Finely mince the celery and garlic. Sauté in olive oil in a large pot for 2-3 minutes.
Step 2
Add the rinsed red lentils, tomato sauce, water, and chopped fresh tomatoes. Season with salt and pepper.
Step 3
Simmer covered for 20 minutes, stirring occasionally.
Step 4
Meanwhile, cook the farfalle in a pot of salted boiling water according to package instructions.
Step 5
Drain the pasta and serve in bowls topped with the vegetarian Bolognese sauce.
Step 6
Finish with freshly grated Gruyère and serve.
