Buddha Bowl with Quinoa and Lentils and Roasted Vegetables

Ingredients
- 100 g Quinoa
- 100 g Lentils
- 200 g Broccoli
- 200 g Cauliflower
- 100 g Beets
- 500 ml Water
- 40 ml Oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Rinse the quinoa and lentils, then cook them together for 20 minutes in 500 ml of salted water.
Step 2
Cut the broccoli, cauliflower, and beets into small florets.
Step 3
Toss the vegetables with oil, spread them on a baking sheet, and roast at 200°C for 25 minutes.
Step 4
Check that the quinoa and lentils are cooked, and drain if necessary.
Step 5
Assemble the bowls by layering the quinoa and lentils with the roasted vegetables.
