Buddha Bowl with Roasted Beets, Quinoa, and Walnut Crumble

Ingredients
- 300 g Beets
- 150 g Quinoa
- 60 g Walnuts
- 30 g Oat flakes
- 350 ml Water
- 3 tbsp Olive oil
- 3 g Salt
- 2 g Pepper
Instructions
Step 1
Cut beets into cubes, toss with oil, salt, and pepper.
Step 2
Roast the beets in the oven at 200°C for 30 minutes.
Step 3
Meanwhile, rinse the quinoa and cook for 15 minutes in 350ml water.
Step 4
Crush the walnuts and mix with oat flakes in a dry skillet for 3 minutes.
Step 5
Assemble the bowls: quinoa on the bottom, roasted beets on top, walnut and oat crumble as garnish.
