Asian Buddha Bowl: Quinoa, Beets, and Peanut Sauce
An inspired Asian-style grain bowl with quinoa, roasted beets, fresh greens, and a creamy homemade peanut sauce.

Ingredients
- 150 g Quinoa
- 300 g Beets
- 1 whole Avocados
- 4 tbsp Olive oil
- 4 tbsp Peanut butter
- 2 tbsp Soy sauce
- 1 whole Fresh lemon
- 10 g Ginger
- 300 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa and cook in boiling salted water for 15 minutes. Let rest for 5 minutes.
Step 2
Peel and cut the beets into cubes. Roast in a 200°C oven with 2 tbsp of oil for 20 minutes.
Step 3
Prepare the sauce: blend peanut butter, soy sauce, lemon juice, and grated ginger with 4 tbsp of water in a food processor.
Step 4
Pit and thinly slice the avocado.
Step 5
Assemble the bowls: quinoa, roasted beets, and avocado. Pour the peanut sauce on top.
