South African Bobotie
A spiced ground beef gratin topped with an egg-based sauce, studded with raisins and dried fruit, quintessentially South African. A richly flavored and comforting dish.
Ingredients
- 500 g ground beef
- 2 medium onion
- 3 clove garlic
- 60 g raisins
- 50 g dried apricots
- 100 g stale bread
- 250 ml milk
- 3 whole eggs
- 2 tsp curry powder
- 0.5 tsp turmeric
- 1 tbsp mustard
- 30 ml white vinegar
- 40 ml peanut oil
- 0.5 tsp salt
Instructions
Step 1
Preheat the oven to 180°C. Soak the stale bread in a little milk, then crumble it.
Step 2
Heat the oil in a large skillet, add the chopped onion and garlic, cook for 3 minutes.
Step 3
Add the ground beef, mix it with a wooden spoon, cook for 5 minutes until browned.
Step 4
Stir in the curry, turmeric, mustard, and vinegar. Add the raisins, apricots, and soaked bread.
Step 5
Pour the mixture into a baking dish. Add the bay leaf. Season with salt and pepper.
Step 6
Whisk the 3 eggs with the remaining milk, season lightly with salt. Pour this mixture over the meat.
Step 7
Bake for 25-30 minutes until the sauce is golden and set.
Step 8
Let rest for 5 minutes before serving. Serve with white basmati rice.
