Roasted Beef Flank with Fennel and Black Olives

Ingredients
- 400 g Beef flank
- 2 bulbs Fennel
- 150 g Cherry tomatoes
- 50 g Black olives
- 2 tbsp Olive oil
- 1 pinch Salt and pepper
Instructions
Step 1
Preheat the oven to 220°C. Cut the fennel into thin quarters.
Step 2
Arrange the fennel and cherry tomatoes on the baking sheet. Add the olives, drizzle with olive oil, season with salt and pepper.
Step 3
Roast the vegetables for 10 minutes. Meanwhile, season the beef flank.
Step 4
Add the beef flank to the sheet and continue cooking 10 minutes for medium-rare meat. Let rest 3 minutes before slicing.
