Shrimp Baghali Polo
Fragrant Iranian rice infused with cardamom, layered with fresh green beans and dill, topped with spiced sautéed shrimp for refined elegance.
Ingredients
- 400 g Peeled shrimp
- 400 g White basmati rice
- 250 g Fresh fava beans
- 25 g Fresh dill
- 2 piece Onions
- 3 clove Garlic
- 6 clove Green cardamom
- 1 pinch Saffron
- 1 stick Cinnamon stick
- 0.5 tsp Turmeric
- 3 tbsp Butter
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 800 ml Water
Instructions
Step 1
Boil the basmati rice in salted water with cardamom, cinnamon, and saffron until cooked through.
Step 2
Drain the rice and set aside.
Step 3
Cook the fresh fava beans in boiling water for 5 minutes, then drain.
Step 4
Slice the onions and mince the garlic finely.
Step 5
Sauté the onions and garlic in olive oil for 2 minutes.
Step 6
Add the shrimp dusted with turmeric, pepper, and salt, and cook for 3-4 minutes.
Step 7
Add the lemon juice and mix well.
Step 8
Gently fold together the cooked rice, fava beans, and freshly chopped dill.
Step 9
Transfer the rice to a serving dish and arrange the shrimp on top.
Step 10
Top with fresh butter and serve hot.
