Portuguese Seafood Rice
A savory Portuguese seafood rice with mussels, shrimp, and squid. A comforting lusitanian classic.

Ingredients
- 300 g Arborio rice
- 200 g Fresh mussels
- 200 g Pink shrimp
- 150 g Fresh squid
- 1 piece Onion
- 4 clove Garlic
- 2 piece Tomato
- 1 piece Red bell pepper
- 700 ml Fish stock
- 150 ml Dry white wine
- 1 bunch Fresh parsley
- 1 piece Red chili
- 0.5 tsp Black pepper
Instructions
Step 1
Clean the mussels and squid. Slice the squid into rings. Blanch and crush the tomatoes. Chop the onion, garlic, and chili.
Step 2
Sauté the onion and garlic in a large pan with a little oil for 2 minutes.
Step 3
Add the bell pepper and squid, cook for 3 minutes.
Step 4
Add the rice and lightly toast for 2 minutes.
Step 5
Pour in the white wine and let it evaporate. Gradually add the stock while stirring.
Step 6
Add the mussels, shrimp, and crushed tomatoes. Cook for 5 minutes until the mussels open.
Step 7
Season with pepper, garnish with fresh parsley and red chili. Serve hot.
