Colombian Ajiaco
A traditional Colombian stew made with corn, sweet potatoes, and red beans, seasoned with local spices. A hearty and flavorful comfort dish.

Ingredients
- 300 g corn kernels
- 400 g sweet potatoes
- 250 g red beans
- 300 g tomatoes
- 2 pieces yellow onions
- 4 cloves garlic
- 1 piece red peppers
- 5 g cumin
- 25 g fresh cilantro
- 1200 ml vegetable broth
- 40 ml olive oil
- 5 g salt and pepper
Instructions
Step 1
Mince the onions, garlic, and pepper
Step 2
Sauté the onions, garlic, and pepper in olive oil
Step 3
Add the crushed tomatoes and cumin
Step 4
Pour in the broth and bring to a boil
Step 5
Add diced sweet potatoes and corn, simmer for 15 minutes
Step 6
Add the red beans and cook for an additional 10 minutes
Step 7
Season to taste and garnish with fresh cilantro before serving
