Adobong Baboy (Philippine Pork Stew with Vinegars)
A savory Philippine dish where pork becomes tender in a blend of vinegars, soy sauce, and garlic. Simmered slowly for a melt-in-your-mouth texture.

Ingredients
- 900 g Pork (shoulder)
- 100 ml White vinegar
- 100 ml Rice vinegar
- 100 ml Soy sauce
- 8 clove Garlic
- 2 piece Onion
- 3 piece Bay leaf
- 1 tsp Peppercorns
- 2 piece Bird's eye chili
- 3 tbsp Vegetable oil
- 200 ml Water
Instructions
Step 1
Cut the pork into 3-4cm cubes
Step 2
Brown the pork cubes in oil in batches, set aside
Step 3
Sauté the minced garlic and sliced onions
Step 4
Return the pork, add the vinegars and soy sauce
Step 5
Add water, bay leaves, peppercorns and chilies, cover and simmer for 45 minutes
Step 6
Check that the meat is tender, cook for 5 more minutes if needed
Step 7
Adjust the seasoning and serve hot
