Adana Kebab with Chickpeas
Spiced lamb kebab skewers Anatolian-style, served with chickpea purée and Turkish bread. A savory Turkish classic.
Ingredients
- 400 g Ground lamb
- 2 piece Onion
- 4 clove Garlic
- 1 piece Red bell pepper
- 1 tsp Espelette pepper
- 1 tsp Cumin
- 1 handful Fresh parsley
- 300 g Canned chickpeas
- 2 tbsp Tahini
- 2 tbsp Lemon juice
- 3 tbsp Olive oil
- 1 pinch Salt and pepper
- 2 piece Turkish bread
- 1 sprig Fresh mint
Instructions
Step 1
Soak 6-8 wooden skewers in water. Finely chop the onion, garlic, bell pepper, and parsley.
Step 2
Mix the ground lamb with the chopped vegetables, Espelette pepper, cumin, salt, and pepper. Divide into portions and wrap around the skewers.
Step 3
Drain the chickpeas and blend with tahini, lemon juice, 1 tbsp olive oil, and water until smooth. Season with salt.
Step 4
Cook the kebabs on a grill or grill pan for 3-4 minutes per side until cooked to your preference (they cook quickly).
Step 5
Warm the Turkish bread for 1 minute. Serve the kebabs on the bread with chickpea purée, sliced tomato, and fresh mint.
