Caribbean Salt Cod Fritters
Crispy fritters made with salt cod, scallions, and Creole spices. Golden fried and savory, typical of Caribbean cuisine.

Ingredients
- 300 g salt cod
- 150 g wheat flour
- 5 g baking powder
- 150 ml water
- 100 g scallion
- 1 piece scotch bonnet pepper
- 20 g fresh parsley
- 1 piece egg
- 1 l frying oil
- 3 g salt and pepper
Instructions
Step 1
Rinse the salt cod and soak it for 12 hours to desalt (or buy pre-desalted).
Step 2
Cook the cod in boiling water for 15 minutes until tender, then shred it.
Step 3
Mix the flour and baking powder. Add the egg and water to form a smooth batter.
Step 4
Mince the scallions, chop the pepper and parsley, and add them to the batter with the cod.
Step 5
Heat the oil to 180°C. Form small balls of batter and fry for 3 minutes until golden.
Step 6
Drain on paper towels. Serve hot.
