Salt Cod Fritters
Golden Caribbean fritters made with shredded salt cod, peppers, and spices, served hot with a spicy chili-based sauce.

Ingredients
- 300 g salt cod
- 100 g cornmeal
- 50 g wheat flour
- 1 piece eggs
- 150 ml water
- 1 piece red peppers
- 1 piece white onions
- 20 g fresh parsley
- 1 piece scotch bonnet pepper
- 5 g fresh thyme
- 5 g baking powder
- 5 g salt and pepper
- 800 ml frying oil
Instructions
Step 1
Soak the salt cod for 24 hours if needed, then cook and shred.
Step 2
Prepare the batter with flours, egg, water, and baking powder.
Step 3
Finely chop the peppers, onions, parsley, and chili.
Step 4
Mix the shredded cod, vegetables, and herbs into the batter.
Step 5
Form balls with two spoons and fry at 180°C.
Step 6
Drain on paper towels.
