Salted Cod Fritters
Caribbean-style fritters made with salted cod, accented with scallions and chili pepper. A crispy and savory appetizer that's very popular throughout the Caribbean.

Ingredients
- 300 g Salted cod
- 150 g Wheat flour
- 2 pieces Eggs
- 150 ml Warm water
- 3 pieces Scallions
- 1 piece Bird's eye chili
- 15 g Flat parsley
- 6 g Baking powder
- 4 g Salt and pepper
- 600 ml Frying oil
Instructions
Step 1
Soak the cod for 12 hours, then desalt and cook for 15 minutes
Step 2
Shred the cod and remove the bones
Step 3
Mix flour, baking powder, eggs, and water to form a batter
Step 4
Fold in the shredded cod, scallions, and minced chili pepper
Step 5
Heat the frying oil to 180°C
Step 6
Form small balls and fry for 3-4 minutes until golden
Step 7
Drain on paper towels and serve hot
