Salt Cod Fritters
Crispy fritters made with salt cod and plantain, a Caribbean specialty served with a spicy sauce. A delicious and crunchy appetizer.

Ingredients
- 300 g Salt cod
- 2 piece Green plantain
- 1 piece White onion
- 1 piece Scotch bonnet pepper
- 1 piece Egg
- 80 g Wheat flour
- 5 g Baking powder
- 80 ml Water
- 500 ml Frying oil
- 3 g Salt
Instructions
Step 1
Desalt cod for 12 hours, cook and shred
Step 2
Peel and grate plantain finely
Step 3
Finely mince onion and pepper
Step 4
Mix flour, baking powder, egg and water
Step 5
Fold in cod, plantain, onion and pepper
Step 6
Form small balls and fry for 3 minutes
Step 7
Drain on paper towels
